Servings: 10-12 slices  

Calories per slice: 180  

Ingredients:  

– 2 cups all-purpose flour  

– 1 cup granulated sugar  

– 1 ½ teaspoons baking powder  

– ½ teaspoon baking soda  

– ½ teaspoon salt  

– ¾ cup fresh orange juice (from 2-3 oranges)  

– ¼ cup unsweetened applesauce (or melted butter)  

– 2 large eggs  

– 1 tablespoon orange zest  

– 1 ½ cups fresh or frozen cranberries, coarsely chopped  

– ½ cup chopped walnuts (optional)  

 

Directions:  

  1. Preheat your oven to 350°F (175°C). Grease a standard loaf pan or line it with parchment paper.  
  2. In a large mixing bowl, combine flour, sugar, baking powder, baking soda, and salt.  
  3. In a separate bowl, whisk together orange juice, applesauce, eggs, and orange zest.  
  4. Gradually fold the wet ingredients into the dry mixture until just combined. Do not overmix.  
  5. Gently fold in the cranberries and walnuts (if using).  
  6. Pour the batter into the prepared loaf pan and smooth the top.  
  7. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.  
  8. Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
